KIWAMI means doing something extremely , or learning all about one thing , or the best degree in Japanese. These knives were created in response to demands for higher grade steel, Super Blue steel.
It is the highest grade steel in Hitachi’s high carbon steel products that contains high percentage of carbon, chrome to increase hardness, improving edge retention and resistance to corrosion.
